Colour:  A vibrant and pristine light golden straw with green tinges. 

Aroma:  The wine offers a complex array of fruit and flower aromas of orange blossom, grapefruit and nectarine.

Palate:  The wine is generous and full of fine flavours of orange blossom, grapefruit and other citrus and white peach. Lees stirring has beautifully integrated the fruit and natural acidity in the wine, giving the wine generosity, balance and a savoury mid palate richness. 

 

Whilst enjoyable now, this wine will reward careful cellaring for up to 2 years.

The wine is made as a very attractive spring and summer time Semillon Sauvignon Blanc and has fruit flavours of lemon, grapefruit and tropical fruits. There is a textural mid palate richness evident in the wine due in part to its barrel-fermentation. The finish is unctuous and well rounded. more info

Palate:   The wine is deliberately made as a dry style Rose after some prompting.  It has very attractive Rose flavours of strawberry cream lollies, cinnamon spice and green skinned fruits.  There is a textural and savoury mid palate richness evident in the wine due to lees stirring.  The finish is unctuous, well rounded and has a lovely acid balance which ensures the wine has good length.

My winemaking belief is that good fruit should be treated gently and with minimal intervention.  The Bress Non Vintage Heathcote & Bendigo Shiraz was treated in this manner.  A combination of whole bunch and gently crushed fruit fermentations occurred in open fermenters.

Aroma:  The wine offers a complex array of fruit aromas of black fruit, spice, cloves and plum.   The oak aromas are of char and vanillian spice. 

Palate:  The wine is tightly packed full of black fruit, spice, cloves, and plum.  The oak characters are beautifully integrated into the wine, giving the wine structure and adding power, balance and a savoury richness. 

 

This wine should be decanted prior to serving.

 

Whilst enjoyable now, this wine will reward careful cellaring for 10 years.
