Bress is a beautiful and idyllic 66-acre, (20 hectare) property that is farmed biodynamically. We have employed biodynamic farming practices at our Harcourt property for two years and we have seen a marked improvement in all of our crops, whether they are grape vines, apple trees, vegetables or our gardens.
The vineyard The 25 acre (11 hectare) vineyard is over 30 years old and is planted to the noble grape varieties, Riesling, Shiraz, Cabernet Sauvignon and Cabernet Franc.
The orchard At 14 acres is one of Australia's largest cider apple orchards and is planted to 9 different cider apple varieties, 4 varieties of Perry pear, which are the pear equivalent of the cider apple.
The Henndorf Hilton Is our luxury 5 star chicken coop that is home for our white Leghorn Chickens, which lay the most pristine white eggs. It is also residence to our Guinea Fowl, Turkeys and Roman Geese.
The kitchen garden Is planted seasonally to a range of vegetables that are picked fresh and used for our weekend lunches and functions held at Bress.
The seasonal market garden In keeping with our philosophy of growing seasonal fruit and vegetables, we are currently planting a beautiful 1-hectare market garden. We intend to sell fresh fruit and vegetables to our cellar door customers and Bress Friends.
The native bushland block In attempt to reintroduce local bird and plant species back to the Harcourt Valley, we are regenerating a six-acre block at the top of our property. We have removed an old vineyard and are in the process of removing blackberries and other introduced tree species. We hope to situate a number of bird nesting boxes throughout the block in Spring 2009.
Cellar Door Our cellar door is built from local Harcourt granite and has commanding views over the striking Mount Alexander range. The tasting room is very light and airy and is conducive to tasting our range of wines, ciders and produce. The cellar door opens into our winery, so visitors that what to know more about the wine and cider making process can be given free winery tours.
